Fresh food can be comforting in the autumn period of the year. This soup is made of fresh orange bell pepper, cashew cream and water as main ingredients. It is very healthy and also high in vitamins C and A, as well as in beta carotene. It’s slightly tangy and mild and just slightly spicy, and it’s one of my healthy satisfying options that I often return to. 

Would warmly recommend it to anyone who wants to consume something with the lovely addictive taste of fresh paprika or just wants a delicious appetizer, or anyone who is on a fasting regime. I have tried to make this soup with less cashew cream and it tasted good too, and the good side of that option is that it is much lower in calories, which makes it sustainable for low calorie diets.

To get a lovely creamy consistency it is necessary to use a high-speed blender. The longer you mix it – the creamier consistency becomes. 

This autumn easy-to-make soup should be served fresh right after preparation and decorated with some raw cashew cream on top.

AUTUMN BELL PEPPER CREAM SOUP

Healthy fresh cream soup made of orange bell peppers

Servings 3 servings

Equipment

  • High-speed blender

Ingredients
  

  • 385 gr of fresh, orange bell pepper;
  • 48 gr walnuts;
  • a bit of water to get creamy soup consistency;
  • pinch of sea salt;
  • 2 tbsp. of fresh lemon juice;
  • 2 tbsp. of maple syrup;
  • a pinch of ground black pepper
  • a pinch of chilli flakes;
  • a pinch of ground coriander;
  • a bit of raw pumpkin seeds, for decoration;
  • some chopped fresh basil, for decoration;
  • 75 gr of cashews-soak them for 35 min in water;
  • a bit of water for mixing with cashews, for the cashew cream.

Instructions
 

  • Using the high-speed blender mix 75 gr cashews with some water into a cashew cream, set aside.
    2. Mix together the rest of ingredients (except the pumpkin seeds and basil) in a high-speed blender into a creamy texture.
    3. Blend together 3/4 of cashew cream with previous mixture, into a creamy soup.
    4  Serve fresh, decorate with the rest of cashew cream, pinch of chilli flakes, chopped fresh basil and pumpkin seeds.
