Quick & easy cheesy sticks with homemade vegan cream cheese

   These lovely vegan cheesy sticks are delicious snack that can be made in a quite short time, they are deliciously crispy on the outside and soft on the inside with a mild taste of salt and toasted sesame seeds. For those vegan cheesy sticks you don’t need to use yeast, they are made with a baking powder as a rising agent and dough doesn’t need to rest. They are so delicious and addictive that my husband said that he could eat them literally every day, after he finished a small plate with some of them on it. 

   I made them with a homemade vegan cream cheese that consists of cashew nuts. It can be made in a little bit more than 30 min. In substance it takes 30 min. for them to be soaked in a hot boiling water and blended afterwards with the addition of a bit of a liquid and seasonings. Prepared cream cheese in that way is ready for everyday consumption or to be used for baking. In case you have allergie on cashew nuts you can substitute this vegan homemade cream cheese with a vegan store bought one, and if it’s very low in fat you will have to add a couple of tablespoons of rapeseed oil (or the same amount of melted vegan butter) to it. For the rest of it you should just follow the instruction steps.

   The other great thing about these sticks is that they don’t require the use of an oven. I made them on a non-stick frying pan. They were frying slowly on a pan with some oil in it on both sides while being covered with alu-foil (because I don’t have a lid for it). It took between 10-15 min for frying per one side. You can bake them without oil or vegan butter in the oven too, yet they will not be so deliciously crispy and with a tasty crunchy crisp because of the lack of grease while baking.

Ingredients
  

  • 260 gr of a vegan cream cheese (200 gr of pre-soaked and drained cashews + 0.4 dcl of water + 1 tbsp. of lemon juice + 2 tbsp. of nutritional yeast + 1/4 tsp. of garlic powder + 1/4 tsp. of salt = blend all together in a blender until creamy consistency, then use;
  • 260 gr of wheat flour + 1 tsp. of baking soda= mix together;
  • 1/4 tsp. of salt;
  • some oil for frying;
  • some sesame seeds to sprinkle on top.

Instructions
 

  • Mix together vegan cream cheese, flour with added baking soda and salt and knead it into a dough. Let it rest for 15 min. Roll it out on a working surface with a rolling pin, it should be as high as the thickness of your finger. Cut out rectangle shapes with a knife and go with your wet hand palm gently over them. Next, sprinkle them with sesame seeds and gently press them into the dough rectangles.
  • Warm up oil in a non-stick frying pan (oil should generously cover the whole bottom of pan), add dough rectangles, cover the pan with alu foil and fry them on a midd temperature making sure that they rise, and fry, but not burn. Fry them for 12-15 min. or until they are golden brown in colour and baked in the center. Flip them on the other side and fry them for the next 10-13 min. on a midd temperature or until they are golden brown. Serve warm or cold, both ways taste great.
