   This is one wonderful warm cream soup made of broccoli that is great for these cold autumn days. Broccoli is rich in various nutritional ingredients such as plant fibers, vitamins C, A and K, and also contains some phosphorus and selenium. I made this soup by cooking broccoli in water and then mixing and adding other ingredients. To preserve all the nutritionally important ingredients from broccoli you can cook broccoli in a steamer for 5-7 min and then use it for making this soup.

 

   You don’t need a lot of ingredients nor a lot of time to make this simple cream soup.

Broccoli Cream Soup

Equipment

  • High-speed blender
  • Pot

Ingredients
  

  • 380 gr. of fresh broccoli;
  • 1 dcl of liquid in which broccoli was cooked;
  • 2 dcl of thick cooking cream;
  • 1 tbsp. of nutritional yeast;
  • a pinch of salt.

For decoration:

  • a bit of pumpkin seeds;
  • a bit of a vegan cooking cream.

Instructions
 

  • Cook broccoli in water, simmer for 4 min. Drain and let it cool down a bit, save water for the step numb. 3.
  • Put broccoli in a high speed blender together with cooking cream and blend it well until creamy consistency.
  • Pour mixture in a pot, add seasoning and 1 dcl. of soup where broccoli was cooked, stir well and cook. Let it simmer for 1. min. Serve warm sprinkled with pumpkin seeds and drizzled/decorated with a bit of vegan cooking cream.
