    This is one delicious vegan pate made of pure vegan ingredients. It’s a smoky take on the classic pate with non vegan ingredients. It tastes great as a spread over bread or vegan crackers sprinkled with fresh chopped chives. It tastes wonderfull too combined with freshly sliced tomatoes, cucumbers and fresh bell peppers.

   It is a twenty minute spread that can be easily done in 10 to 15 minutes if you already have pre-cooked and grated carrots. Carrots should be pre-cooked before grating. I have used 4 young carrots and that was enough to get that salmony texture that strongly resembles non vegan salmon pate.

Ingredients
  

For the pate:

  • 4 young carrots or 2 large carrots, cooked and grated;
  • 250 gr of drained tofu (smoked tofu is great option too);
  • 1 small chopped raw onion;
  • 1 clove of fresh garlic, chopped;
  • 1/2 tsp. of dried onion powder;
  • 1/2 tsp. up to 1 tsp. of ground black pepper;
  • 1/4 tsp. of garlic powder;
  • 1/2 tsp. up to 3/4 tsp. of salt;
  • a bit of liquid smoke approx. 5 -10 drops or as much as you prefer (depending on your personal taste);
  • tiny bit on top of knife of vegan red food colour for a slight hint of warm shade of pink colour (I used red paste food colour from a brand "Fun Cakes").

Decoration:

  • a bit of fresh chives.

Instructions
 

  • Add all ingredients (except vegan food colour, carrots and salt) into a food processor. Blend all ingredients well to get a fine texture (such is pate texture).
  • Take pate out from food processor. Add salt (first only 1/2 of tsp, then add more if you prefer more salty taste) and stir pate well. Add some extra seasoning to adjust taste to your personal choice.
  • Last, add carefully vegan food colour. Food colour often has intensiv effect, therefore add it on top of knife. You will probably need only a small dot of red colour on top of a sharp knife (depends on brand and the quality). Stir well before adding some more to make sure that whole amount of colour is well incorporated into pate, then add grated carrots and stir well.
  • Store in the refrigerator. Serve cold as spread over bread od vegan crackers together with fresh sliced tomatoes, cucumbers and bell peppers.
