Vegan Homemade Meatballs with Potatoes in Tahini Sauce is a lemony, family-friendly dish rich in fibers and low in potassium. Vegan Meatballs are full of tofu proteins and fibers that come from chia, aubergine and the rest of ingredients. It’s healthy due to the presence of different vegetables, and therefore easy for digestion too.

Grounded pepper together with lots of fresh parsley and rich creamy tahini garlic sauce adds amazing taste and perfect balance to the dish. The amount of ground pepper and salt can be enlarged, then the dish will have a more impactful, spicier taste.

Flavour of Vegan Homemade Meatballs seasoned with pepper goes perfectly along with potatoes and tahini sauce. Feel free to add more tahini, garlic, or lemon juice to sauce, if desired.
The flavor of Vegan Homemade Meatballs can be enhanced by adding extra amounts of pepper, salt and parsley, and the dish will not lose its original specific taste.

The amount of tahini for the tahini sauce can be increased as well as the amount of water for reducing the tahini sauce. In that case the dish should be roasted a bit longer to keep it’s  crispiness on top of meatballs and poatoes.

 

The dish tastes great too with addition of some fresh broccoli or cauliflower roasted along with potatoes.

Ingredients

Vegan homemade minced made by the recipe in the following link:

For making and shaping vegan meatballs:
 
  • Vegan homemade minced from the link above;
  • 45 gr of bread crumbs; 
  • 3 tbsp. of psyllium;
  • 9-10 tbsp. of fresh chopped parsley;
  • 1/4 of tsp. of salt (or more by personal taste);
  • 3/4 tsp. of ground pepper (or more).

Potatoes:

  • 900 gr of potatoes, peeled off and thinly sliced (as on images);
  • some salt and pepper for seasoning potatoes.
For the Tahini Sauce:
  • 6 – 7 tbsp. of tahini;
  •  juice of 1 lime, or juice of 1/2 of large lemon;
  • 1,8 dcl -2.5 dcl of hot boiling water;
  • 1/2 tsp. of salt;
  • 2 cloves of garlic, finely chopped.
 
Additional:
  • Some oil for greasing the baking tray;
  • 7-9 tbsp. of water to add to the dish just before baking;
  • 4-5 tbsp. of fresh chopped parsley for decoration;
  • 1 lemon to serve with the dish.

Instructions

 
Preparation:
1. Combine and mix all ingredients for tahini sauce, then set aside.
2. Use Vegan Homemade Minced with the addition of breadcrumbs and psylium (as in the linked recipe), add chopped parsley, salt and pepper and mix well. 
3. Shape 9 -10 mid-sized vegan meatballs, then set them aside.
4. Preheat the oven to 200 degrees Celsius.
5. Peel off potatoes, slice them and season with salt and pepper.
6. Take an oven tray and grease it with some oil. Put sliced potatoes on a tray, then put vegan meatballs on top of potatoes. Pour tahini sauce all over potatoes and vegan meatballs. Add 7-9 tbsp. of water on bottom of the baking tray and put the tray into the preheated oven. 
7. Bake  at 200 degrees Celsius for 35-40 min. Turn off the oven, take the dish out and let it rest for 5 min.
8. Season it with 3-4 tbsp. fresh, chopped parsley.
9. Serve warm with lime or lemon slices, plantbased yoghurt, and with some fresh seasonal salad.
 
 

Notes

* Vegan Homemade Meatballs can be substituted by some good store bought once. In that case preparation and cooking time of this flavourful dish will be shortened.
