   Cauliflower is a vegetable rich in vitamin B6, fibers and vitamin K. Mostly I use it in soups, mashed, or baked in the oven as a side dish. It also tastes great raw. Make sure that the cauliflower is not bitter at all if you decide to make this  raw cream soup. Otherwise it definitely won’t be edible.

   I made this tasty soup with the addition of raw sunflower seeds and some raw tahini. To get a nice creamy consistency you have to use a high speed blender to blend the grainy texture into a smooth one. You may also decorate it with some fresh parsley or basil in case you are not a big fan of carrots and chilli flakes.

Equipment

  • High-speed blender

Ingredients
  

  • 350 gr of raw cauliflower florets, make sure that it does not taste bitter;
  • 1.5 dcl of water, and some more;
  • 2 tbsp. of raw sunflower seeds;
  • 1 tbsp. of tahini;
  • a pinch of salt;
  • a bit of carrot and chilli flakes for decorating.

Instructions
 

  • In a blender blend sunflower seeds with cauliflower and 1.5 dcl. of water until creamy consistency.
  • Add the rest of ingredients and stir well, add more water until you are satisfied with the texture. Serve immediately, decorate with fresh carrots and a bit of chilli flakes.
