RAW GREEN SALAD

Lovely raw salad made of romanseco, romaine lettuce, onion and cherry tomatoes

Ingredients
  

  • 1 large piece of romaine lettuce, cut;
  • 150 gr of cherry tomatoes, sliced in halfs;
  • 100 gr of fresh romanesco, cut in pieces;
  • 1 large red onion, sliced.

For the dressing:

  • 2 tbsp of raw light tahini;
  • 1/4 tsp. of salt;
  • 5 tbsp of water;
  • 5-6 tbsp. of lemon juice;
  • 1-2 cloves of garlic mashed into a paste or 2 tsp. or garlic powder.

To sprinkle on top:

  • some chopped pistachios.

Instructions
 

  • Place all ingredients into a bowl.
  • Make a dressing by mixing all ingredients together. Add a bit more water if you prefer reduced dressing.
  • Pour the dressing over the salad. Sprinkle with pistachios and serve fresh.
  • If you plan to serve it later you can keep it in a fridge for a couple of hours covered in a glass box, and you should add dressing to it just before serving.
