Pearl Barley & Lentil Burger

Burger made of pearl barley, lentils and seasonings, served with homemade fries from air fryer

Equipment

  • High-speed blender
  • Non-stick frying pan

Ingredients
  

For burgers:

  • 80 gr of pearl barley + some hot boiling water for soaking + pinch of salt;
  • 1 onion, 60 gr;
  • 1 clove of garlic;
  • 4 tbsp. of ground walnuts;
  • 100 gr of lentils, canned or precooked;
  • a bit of chopped fresh parsley;
  • 1/3 tsp. of salt, or more, depending on personal taste;
  • 1/2 tsp. of black pepper;
  • 4-5 tbsp. of vegan bread crumbles.

Additional:

  • a bit of oil for frying burgers;
  • couple of leaves of romaine lettuce, iceberg or another salad;
  • pickled cucumbers;
  • 1 to mato sliced in pieces;
  • 1 red onion sliced in pieces;
  • a bit of vegan mayo;
  • some chili sauce;
  • 2 large burger buns sliced in half.

Instructions
 

  • Soak pearl barley in hot boiling water and let it sit for 30 min, then drain it out of excess water. Put it in a strong blender together with garlic, ground walnuts, onion and pulse until you get a crumbly structure. Add presoaked lentils with seasonings and pulse briefly a couple of times. Add bread crumbles, stir well and let it rest for 4-5 min.
  • Shape large burgers with slightly wet hand palms and fry them on a non-stick frying pan on a bit of oil on both sides. Fry them on a middle - high temperature. Once they are done and have a lovely brown colour, put large slices of good quality vegan cheese over burgers and set them aside.
  • Warm up well sliced burger buns on a non-stick pan. Place slices of buns on a plate and add burgers with slightly melted cheese on top of them, place salad above it and then add the rest of ingredients. Serve immediately with homemade fries and enjoy.
