Pearl Barley Burgers
Vegan burgers made of soaked pearl barley

- 180 gr of pearl barley + pinch of salt + some hot boiling water to soak it for 30 min;
- 120 gr of red onion, chopped a bit;
- 3/4 tsp. of black ground pepper (and more if you prefer more spicy taste);
- handful of parsley;
- 1/2 tsp. of salt;
- 1/4 tsp. of baking powder;
- 2 tbsp. of water;
- 1 tbsp. of vegan bread crumbs;
- a bit of oil for frying (I used organic rapeseed oil).
Additional:
- fresh lettuce salad;
- sliced tomato;
- sliced red onion;
- a bit of vegan mayo;
- slices of vegan cheese;
- a bit of chili sauce.
- homemade or store-bought buns.
Put pre-soaked (for 30 min. and drained) pearl barley into a high speed blender together with other ingredients except bread crumbs and baking powder. Blend until crumbly consistency. Add baking powder and bread crumbs and stir well until well incorporated. Shape two large or 3 medium burgers (with slightly wet palms) and fry them on a non-stick frying pan on a bit of oil on a medium to high temperature on both sides.
Turn off the stove and place slices of cheese on top of burgers. Put burgers on the bottom part of a sliced buns, add a bit of mayo, chili sauce (or ketchup), lettuce, tomato and onion slices. Warm up for 30 seconds in the microwave or oven and serve warm with air fryer (or oven) baked fries.
