SIMPLE CHICKPEA poTtage

Warm comfort food for cold winter days. It is not high in fats (2 tbsp. for the whole batch). Nothing can be as simple to make as this tasty homemade chickpea pottage. This pottage tastes wonderful if served warm with homemade warm mash potato.
I often make this dish, and the results are the same no matter if it’s made with or without a pressure cooker.

First I briefly sauteed onions for 3 min with a pinch of salt, then added chopped leek, then chickpeas and vegetable broth cubes with the rest of seasonings. I added a whole amount of water and let it cook until it was tender. At the end I dissolved wheat flour in water and added to pottage.

For the mash potato I peeled of potatoes, chopped into small cubes and cooked them in salty water. Once they were nicely tender I mixed them in a blender with soy milk, salt and nutritional yeast. To make the dish look nice I put mash potato into a piping bag with nozzle and decorated warm pottage by making potato florets on the surface of pottage. At the end I sprinkled with fresh parsley.

Feel free to sprinkle it on top with a bit of freshly ground pepper. It will give a lovely taste.
